Vanilla buttermilk cupcakes

    This is a basic cupcake recipe and my favourite. Decorate as you like.

    Serves: 12 

    • 240g plain flour
    • 1 1/2 teaspoon baking powder
    • 1/4 teaspoon bicarbonate of soda
    • 1/4 teaspoon salt
    • 200g butter, softened
    • 160g caster sugar
    • 2 large eggs
    • 2 teaspoon vanila extact
    • 120ml buttermilk
    • icing of your choice (see footnote)

    1. Preheat your oven to 180 C / Gas 4. Grease a muffin tin or line with paper cases.
    2. In a bowl beat butter, sugar and vanilla extract till foamy. Add eggs one by one and stir well after each addition. Add buttermilk and stir again.
    3. In another bowl stir flour with baking powder, bicarb of soda and salt and fold into mixture.
    4. Using an ice cream scoop, fill paper cases to about 3/4. Bake in the preheated oven for 20 to 25 minutes.
    5. Let cool for 10 minutes in the tin, then transfer cupcakes to wire rack let let cool completely.
    6. Decorate with icing of your choice.
