Chocolate cupcakes with chocolate icing

    These cupcakes are for those you cannot get enough chocolate! The chocolate icing is a chocolate ganache that requires only two ingredients, double cream and plain chocolate.

    Makes: 12 

    • For the cupcakes
    • 100g butter, softened, OR 125ml vegetable oil
    • 200 to 250g caster sugar
    • 2 eggs
    • 2 teaspoons vanilla sugar
    • 175g plain flour
    • 80g unsweetened cocoa
    • 1 teaspoon baking powder
    • 125ml milk
    • For the chocolate icing
    • 200g double cream
    • 200g plain chocolate

      Bake the cupcakes

    1. Preheat oven to 180 C / Gas 4. Grease a muffin tin or line with paper cases.
    2. In a bowl beat butter and sugar till creamy. Add eggs and vanilla sugar and beat till combined. Add milk and beat again till smooth.
    3. In another bowl mix flour, cocoa and baking powder and add to the mixture. Stir till evenly combined.
    4. Fill mixture in prepared paper cases and bake in the preheated oven for 20 minutes. Let cool on a wire rack.
    5. Make the icing:

    6. Heat double cream and chocolate in water bath till chocolate is melted. Beat with an electric mixer till thick and glossy, about 7 to 9 minutes.
    7. Refrigerate for 5 minutes, then fill icing in a pastry bag with a star shaped nozzle and pipe icing onto cupcakes. Refrigerate till serving.
