Dulce de leche with whey

    When I make cheese there is always a lot of whey left over and it's a pity to just pour it into the kitchen sink. I am using it either for bread baking or to make dulce de leche, I add about one quarter sugar which is not extra sweet but you can add more.

    • 1L whey
    • 250g granulated sugar

    1. Pour whey through a fine sieve into a heavy saucepan. Add sugar and slowly bring to the boil, stirring to dissolve sugar.
    2. Reduce heat to low and leave to simmer uncovered for 3 to 4 hours, stirring every so often. As soon as the mixture has the colour of caramel, don't walk away because it will darken quickly so the dulce de leche will not get too dark and turn into a rock when cooled.
    3. As soon as it has a nice caramel colour remove from the hob at once and slowly pour in a sterilised jar placed on a damp tea towel so the jar won't crack. Be very careful, the mixture is very hot and it can splatter. Let cool then close tightly with a lid and refrigerate. To soften it, place the amount you need on a small place and place in the microwave for 10 seconds.
