About this recipe:
This is a traditional Welsh (Cymreag) recipe for honey cakes.

1/2 tsp bicarbonate of soda
110g (4 oz) butter or margarine
a little milk

20 min › Ready in:
Preheat the oven to 220 C / gas 7.
Cream together butter and sugar.
Separate the egg yolk from the white.
Beat the yolk into sugar and butter then, add the honey, gradually. Stir in the flour with a little milk as required and mix all together lightly.
Whisk the egg white into a stiff froth and fold into mixture.
Half fill the cups in a small bun tin with the mixture; sprinkle the top of each with caster sugar. Bake for 20 minutes.
When ready sprinkle a little more sugar, if you like.
These tasted pretty good but a bit dry. I'll do it again but add more milk next time. I guessed how much 'a little milk' was ,and my mixture was splodgy rather than slightly runny. Will go for a runnier mixture next time.
