This pasta salad can replace a main course on hot summer days when you don't feel like cooking much. The fried gammon steak adds enough substance to the salad to make meat eaters happy.

12 thin slices smoked gammon steak, cut into strips
For the dressing
5 tablespoons olive oil
2 tablespoons balsamic vinegar
1 tablespoon prepared mustard
1 garlic clove, minced
1 tablespoon caster sugar

Break spaghetti in half and cook according to packet instructions till al dente. Drain and place in a large bowl.
Heat a little olive oil in a frying pan and fry gammon still crispy.
For the dressing stir olive oil and balsamic vinegar in a bowl till smooth. Add mustard, garlic, salt, pepper and sugar. Pour over spaghetti whilst still warm and toss till evenly coated. Let spaghetti cool.
Taste for salt just before serving (gammon adds salt!) then toss with fried gammon and rocket.
