Green mango dessert

    Unlike ripe mango, green unripe mango is cooked to soften it.

    • 2 green mangoes, peeled, stone removed and diced
    • 6 tablespoons caster sugar
    • 250ml water
    • 200ml chilled whipping cream
    • 1 tablespoon caster sugar, to taste
    • 1 tablespoon baking cocoa

    1. In a saucepan add mango, 6 tablespoons sugar and water. Bring to the boil, then reduce heat and simmer till the water has entirely evaporated, about 15 minutes.
    2. Remove from the heat then let cool. Distribute the compote among dessert bowls and refigerate.
    3. Whip cream till stiff, adding 1 tablespoon sugar, or to taste.
    4. Distribute whipped cream among the bowls and return to fridge till well chilled. Dust with cocoa just before serving.
