Fennel tomato salad

    A quick raw food salad with tomatoes and fennel.

    Ingredients
    Serves: 4 

    • 8 tomatoes
    • 1 to 2 fennel bulbs
    • 8 tablespoons sunflower oil
    • 4 tablespoons apple cider vinegar
    • 2 teaspoons caster sugar
    • 1 teaspoon salt
    • 1 bunch basil, chopped
    • minced chives

    Method

    1. Slice tomatoes. Trim fennel, cut on half or quarter depending on size, and cut into thin strips. Add both to a bowl.
    2. In a small bowl stir oil, vinegar, sugar, salt and herbs. Add to salad and toss.
