Cumberland sauce

    Lingonberry jam is the first choice for Cumberland sauce but if you cannot find it, use cranberry sauce instead.

    Ingredients
    Serves: 4 

    • 8 tablespoons redcurrant jelly
    • 4 tablespoons lingonberry jam or cranberry sauce
    • 4 teaspoons prepared English mustard
    • 8 to 10 tablespoons port wine
    • 1 orange, zested and juiced
    • salt and pepper

    Method

    1. Mix all ingredients in a small saucepan and bring to the boil. Reduce heat and simmer, uncovered, for 10 minutes. The sauce keeps for a couple of weeks in the refrigerator.
