Lingonberry jam is the first choice for Cumberland sauce but if you cannot find it, use cranberry sauce instead.

8 tablespoons redcurrant jelly
4 tablespoons lingonberry jam or cranberry sauce
4 teaspoons prepared English mustard
8 to 10 tablespoons port wine
1 orange, zested and juiced
salt and pepper

Mix all ingredients in a small saucepan and bring to the boil. Reduce heat and simmer, uncovered, for 10 minutes. The sauce keeps for a couple of weeks in the refrigerator.
