Rolled oat macaroons

    I like these simple macaroons with a generous amount of crystallized ginger. It's up to personal taste how much you add.

    Makes: 2 baking trays

    • 3 egg whites
    • 150g caster sugar
    • 150g rolled oats
    • 30g crystallised ginger, minced

    1. Preheat your oven to 180 C / Gas 4. Line 2 baking trays with greaseproof paper.
    2. Beat egg whites till very stiff, gradually adding sugar.
    3. In a bowl stir oats and ginger. Fold in egg whites. Place small macaroons on the baking trays.
    4. Bake for 25 to 30 minutes. Carefully transfer macaroons to a cake rack and let cool till hardened. Store in airtight tins.
