Brussels sprouts and ham gratin

    This is a gratin that you can serve as a main dish. If you want to add a side, mashed potatoes go well with it.

    Serves: 4 

    • 1kg Brussels sprouts
    • 375g cooked ham
    • salt
    • 1 knob butter
    • 125ml meat stock
    • 3 eggs
    • 125ml milk
    • pepper
    • ground nutmeg
    • 75g grated cheese

    1. Wash and trim Brussels sprouts and cook in salted water for 10 minutes till al dente. Drain.
    2. Preheat your oven to 200 C / Gas 6.
    3. Cut ham into strips and add to a bowl together with the Brussels sprouts. Stir to combine and tip into a greased gratin dish. Pour stock over veg.
    4. In a bowl beat eggs with milk, pepper, salt and nutmeg, then stir in the cheese. Pour over veg.
    5. Cover with aluminium foil and bake in the preheated oven for 15 minutes. Remove foil and bake for a further 15 minutes.
