Italian stuffed courgettes with breadcrumbs

    Potatoes, basil, Parmesan, Pecorino and pine nuts create a delicate pesto-flavoured filling for courgettes. The stuffed courgettes are topped with cheesy breadcrumbs and baked until golden on top. Serve with a green salad for a light evening meal.

    • 8 medium courgettes, trimmed and sliced in half lengthwise
    • For the filling
    • 2 medium boiled potatoes, mashed
    • 1 tablespoon extra virgin olive oil
    • 1 whole and slightly crushed garlic clove
    • ½ teaspoon salt
    • ½ teaspoon ground black pepper
    • 1 egg
    • 2 tablespoons grated pecorino cheese
    • 2 tablespoons grated Parmesan cheese
    • 2 tablespoons pine nuts
    • 20 basil leaves, sliced
    • Topping
    • 1 tablespoon of grated pecorino cheese
    • 1 tablespoon of grated Parmesan cheese
    • 2 tablespoons breadcrumbs
    • 1 tablespoon of pine nuts
    • 1 tablespoon of extra virgin olive oil

    1. Preheat the oven to 200 C / Gas 6. Line a baking tray with baking paper or foil.
    2. Heat oil in a pan over medium heat; add garlic and stir to coat in oil. Scoop out flesh from courgettes and add to pan; stir and cook for a few minutes. Season with salt and pepper and remove garlic clove.
    3. Add mashed potato, egg, 2 tablespoons grated Parmesan and pecorino cheese, 2 tablespoons pine nuts and basil.
    4. Transfer mixture into a piping bag fitted with a medium-large nozzle; stuff hollow courgettes with filling. Place courgettes on prepared baking tray.
    5. Mix remaining grated cheese, pine nuts and breadcrumbs; spoon the mixture evenly on top of courgettes.
    6. Drizzle a little oil on top of courgettes and transfer them to preheated oven. Cook for 30 minutes or until the topping on the courgettes is golden in colour.

    Parmesan cheese:

    Parmesan cheese is not truly vegetarian, as it contains animal rennet. To make this dish 100% vegetarian, omit the cheese or find a suitable vegetarian substitute made without animal rennet. In supermarkets look for the 'parmesan style hard cheeses' which are suitable for vegetarians.
