Pasta with cauliflower, tomatoes and breadcrumbs

    This light pasta, tomato and cauliflower dish is very tasty and makes a great starter to an Italian-themed meal.

    Serves: 4 

    • 1 or 2 tablespoons extra virgin olive oil, or as needed
    • 1/2 medium-sized onion
    • 200g of fresh or peeled tomatoes
    • salt, as needed
    • 400g broken penne pasta
    • 600g cauliflower florets
    • 30g breadcrumbs, or as needed

    1. Heat oil in a pan over medium heat; add onion and cook until softened. Stir in chopped tomatoes and cook til broken down.
    2. Boil pasta and cauliflower in a large pot of salted water until al dente, about 8 to 10 minutes. Drain and add to the tomato mixture in pan.
    3. Stir in breadcrumbs and serve.
