Italian tuna pasta salad

    Bring your tuna pasta salad to a new level by adding capers, tomatoes, fresh basil and Parmesan cheese like the Italians do!

    Serves: 4 

    • 325g farfalle or bow-tie pasta
    • 2 tablespoons of extra virgin olive oil, divided
    • 3 tablespoons of capers
    • 2 tins tuna in oil, drained
    • 5 fresh basil leaves, finely sliced
    • 15 cherry tomatoes, halved
    • salt and freshly ground black pepper
    • 4 tablespoons grated Parmesan cheese

    1. Cook pasta in lightly salted boiling water according to the timing on the packaging; drain and transfer pasta into a large salad bowl.
    2. Add 1 tablespoon of olive oil; allow pasta to cool at room temperature for a few minutes.
    3. Add the capers, tuna, freshly chopped basil and cherry tomatoes to the pasta. Season with salt and pepper; toss to mix and chill salad in fridge for at least 2 hours.
    4. Just before serving, drizzle remaining tablespoon of olive oil on top and garnish with grated Parmesan cheese.
