Jamaican coffee

    The perfect coffee drink after a meal. This twist on an Irish coffee uses dark rum instead of whisky. If you fancy a sweeter drink, add sugar to taste.

    Serves: 1 

    • 20ml dark rum
    • 20ml coffee flavoured liqueur
    • 250ml brewed coffee
    • 2 tablespoons whipped cream
    • 1 chocolate covered coffee bean

    1. Pour rum and coffee liqueur into a decorative coffee glass. Fill glass with hot coffee. Top with a dollop of whipped cream and garnish with a coffee bean.

    I thought this was delightful. Not too strong at all, but I am Irish. I didn't measure out 1 cup of coffee; just filled a standard sized mug. Used Kahlua and Bacardi Select Dark Rum. 2 tablespoons whipped cream? Bolderdash! Added whipped cream with a heavy hand.
