Banana coconut muffins

    These dairy free banana muffins are made with coconut milk and oil instead of dairy.

    Ingredients
    Makes: 12 muffins

    • 250g plain flour
    • 2 teaspoons baking powder
    • 1 pinch salt
    • 70g desiccated coconut
    • 1 large ripe banana
    • 1 egg
    • 125ml coconut milk
    • 50ml vegetable oil
    • 2 teaspoons vanilla sugar

    Method

    1. Preheat your oven to 180 C / Gas 4. Grease a muffin tin or line with paper cases.
    2. In a bowl stir flour, baking powder, salt and coconut. In another bowl whisk egg, coconut milk and oil. Add sugar and vanilla sugar and whisk till dissolved. Mash banana with a fork and add. Stir to combine.
    3. Fold the flour mixture into the moist ingredients using a spatula. Do not stir but fold in till evenly moistened. Fill mixutre into muffin cases to about 2/3.
    4. Bake in the preheated oven till lightly browned, about 18 to 20 minutes. Remove muffins from tin and let cool on a wire rack.
