These dairy free banana muffins are made with coconut milk and oil instead of dairy.

Makes: 12 muffins
250g plain flour
2 teaspoons baking powder
1 pinch salt
70g desiccated coconut
1 large ripe banana
125ml coconut milk
50ml vegetable oil
2 teaspoons vanilla sugar

Preheat your oven to 180 C / Gas 4. Grease a muffin tin or line with paper cases.
In a bowl stir flour, baking powder, salt and coconut. In another bowl whisk egg, coconut milk and oil. Add sugar and vanilla sugar and whisk till dissolved. Mash banana with a fork and add. Stir to combine.
Fold the flour mixture into the moist ingredients using a spatula. Do not stir but fold in till evenly moistened. Fill mixutre into muffin cases to about 2/3.
Bake in the preheated oven till lightly browned, about 18 to 20 minutes. Remove muffins from tin and let cool on a wire rack.
