Mascarpone amaretti dessert

    In Italy this delectable mascarpone mousse with amaretto liqueur and crumble amaretti biscuits is often served at Christmas with panettone but it's also delightful just on its own.

    Serves: 10 

    • 5 eggs, separated
    • 6 tablespoons caster sugar
    • 1 tablespoon Amaretto di Saronno®
    • 500g mascarpone
    • 150ml single cream
    • 15 crumbled amaretti

    1. In a large salad bowl, using electric whisk, whisk the egg yolks with the sugar till the mixture is thick and pale yellow.
    2. Continue to beat whiilst adding Amaretto and mascarpone.
    3. In another bowl beat egg whites until stiff.
    4. Whip the cream.
    5. Using a silicone spatula or a wooden spoon, fold the egg whites and the whipped cream into the mascarpone mixture.
    6. Fold in the crumbled amaretti.
    7. Serve immediately on its own or with panettone.


    This recipe contains raw eggs. It is recommended that pregnant women, young children and the elderly do not consume raw eggs.
