Blender crepe batter

    These delicate crepes are perfect for brunch, served with a sweet or savoury filling. The secret to perfect cooking is to wait until the pan is hot and then to cook over medium heat.

    Serves: 4 

    • 30g butter
    • 2 eggs
    • 125g plain flour
    • 1 pinch of salt
    • 250ml milk

    1. Preheat oven to lowest heat.
    2. Place butter in nonstick pan; melt over medium heat.
    3. Place eggs, flour, salt and milk in a blender. Blend for 1 minute, add melted butter and blend again.
    4. Place pan on medium heat again and when hot, pour 1 ladle of batter into the centre of pan. Rotate the pan quickly to distribute the batter.
    5. Cook for about 50 seconds, or until bubbles begin to form on the surface. Turn the crepe over and cook for another 40 or 50 seconds.
    6. Repeat with remaining batter, transferring the cooked crepes into a dish and keeping them warm in oven until ready to serve.
