Orecchiette pasta with spicy sausage ragu

    Sausages are cooked in a white wine and tomato sauce and seasoned with chilli flakes to make this tasty ragu for pasta. If you are using plain sausages, add some dried rosemary or thyme to the sauce.

    Serves: 4 

    • 1 tablespoon olive oil
    • 250g pork sausages, chopped
    • 60ml white wine
    • 1 (690g) jar tomato passata
    • 500g orecchiette or penne pasta
    • salt and pepper, to taste
    • pinch of dried chilli flakes
    • freshly grated Parmesan cheese, to serve

    1. Bring a large pot of lightly salted water to the boil. Add orecchiette pasta and cook for 8 to 10 minutes or until al dente; drain.
    2. Heat oil in a pan over medium heat; add sausages and cook until browned.
    3. Stir in white wine and tomatoes; season with salt, pepper and chilli flakes. Simmer and stir until sauce has thickened.
    4. Stir orecchiette pasta into sauce; divide onto plates and top with freshly grated cheese.
