Best Mars Bar Cake

    Chocoholics like me will love this one. Moist, but firm, with delicious melted Mars™ bars on top.

    Serves: 12 

    • 170g plain chocolate
    • 120g unsalted butter
    • 60g plain flour
    • 4 egg yolks
    • 4 egg whites
    • 100g caster sugar
    • 2 Mars™ bars
    • 2 tablespoons double cream

    1. Preheat the oven to 170 C / Gas mark 3. Grease and flour a 23cm (9 in) springform cake tin. In the top of a double boiler, heat chocolate and butter, stirring occasionally, until chocolate is melted and smooth. Remove from heat and allow to cool to lukewarm.
    2. Transfer chocolate mixture to a large bowl. Beat in the flour and egg yolks. In a separate large glass or metal mixing bowl, beat egg whites until foamy. Gradually add sugar, continuing to beat until stiff peaks form. Fold 1/3 of the whites into the chocolate mixture, then quickly fold in remaining whites until no streaks remain. Pour batter into prepared tin.
    3. Bake in the preheated oven for 35 minutes. Turn off oven, crack the door, and allow cake to cool in oven.
    4. In a saucepan, melt chocolate covered nougat candy bars with the cream. Pour over cooled cake.

    Something else. my mum used to make this cake with coffee buttercream sandwiched between two layers of chocolate cake. It is delicious.  -  03 Jul 2011
