Chicken breasts with mushrooms and an indulgent white wine and mustard sauce. A real treat for mushroom lovers!

4 chicken breast fillets
250g chestnut mushrooms
150ml double cream
1 tablespoon mayonnaise
2 tablespoons French mustard
knob of butter
a few cracked peppercorns
150ml white wine
pinch salt for seasoning

Place chicken breasts in a oven dish; season and cook in a 200 degree c preheated oven for 45 minutes.
15 minutes before the chicken is ready, slice mushrooms and place in a pan with butter and most of the wine. Bring to the boil and then simmer for 10 mins to allow any water from the mushrooms to evaporate.
Reduce heat and add the rest of the wine, mayo, mustard and peppercorns.
Remove pan from heat and stir in cream. Place back on low heat and stir until it has thickened slightly. It'll still be quite a runny sauce.
Place chicken on plate and spoon over sauce. Serve with boiled new potatoes or chips.
