Apple and almond kuchen

    Delicious German recipe for apple kuchen. Incorporating almond into the shortbread base and liberal amounts of cinnamon and vanilla extract to create a mouth watering topping.

    • Pastry
    • 175g plain flour
    • 50g ground almonds
    • 110g cold butter, cubed
    • 4 tablespoons caster sugar
    • zest of 1 lemon
    • 1/2 teaspoon baking powder
    • 1 pinch salt
    • Filling
    • 4 red dessert apples
    • 2 egg yolks
    • 85g caster sugar
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon vanilla extract
    • 150ml whipping cream
    • To serve
    • creme fraiche
    • cinnamon for dusting

    1. Preheat the oven to 200 C / Gas 6.
    2. Place flour, ground almonds, butter, 4 tablespoons sugar, lemon zest, baking powder and salt in a large bowl and rub the mixture between your fingers until it resembles breadcrumbs.
    3. Press into a greased 22cm flan tin or ceramic dish and chill for 10 minutes.
    4. Core the apples, cut in half and slice into 5mm slices. Arrange the apples to cover the pastry - leave on one side.
    5. Make the filling by stirring the egg yolks, remaining sugar, cinnamon and vanilla extract and cream together and pouring over the apples.
    6. Bake for 45 minutes or until the custard is firm and apples are lightly browned (check after 30mins).
    7. Dust with cinnamon and serve warm with creme fraiche.

    This recipe sounds delicious! However, it states two lots of caster sugar - one in 'ml' which I'm guessing is a mistake..?  -  22 Mar 2013
