Mandarin Trifle

    This recipe reminds me of my childhood. On many a Sunday, my Mum would serve this dessert, to compliment our roast dinner.

    Serves: 6 

    • 1 jam filled Swiss roll
    • 298g tin mardarins in juice
    • 500ml custard
    • whipped cream, optional

    1. Cut Swiss roll into 8 slices. Arrange 4 slices on bottom of serving dish.
    2. Strain mandarins, reserving juice. Pour half of the juice over the Swiss roll, then top with half of the mandarins.
    3. Pour over half of the custard.
    4. Repeat these steps again. Chill in fridge for best results. Before serving, top with whipped cream (optional).
