White Chocolate, Cranberry and Coconut Tea Cake

    This is a glorious cake with distinctive flavours - a combination that is unique but inviting. This is a very easy, no-fuss cake to make. Enjoy!

    Serves: 10 

    • 375g plain flour
    • 2 teaspoons baking powder
    • 1 teaspoon bicarbonate of soda
    • 1/2 teaspoon salt
    • 200g caster sugar
    • 225ml vegetable oil
    • 3 large eggs, beaten
    • 1/2 teaspoon vanilla extract
    • 175g roughly chopped good white chocolate (such as Green and Blacks)
    • 4 tablespoons desiccated coconut, plus more for sprinkling
    • 150g dried cranberries

    1. Preheat oven to 180 C / Gas 4. Grease one 450g loaf tin.
    2. Mix flour, baking powder, bicarb, salt and sugar in a large bowl.
    3. Add the oil, eggs, vanilla, chocolate, coconut and cranberries. Fold together until dry ingredients are just moistened.
    4. Pour cake mixture in the loaf tin and sprinkle some coconut on top.
    5. Bake for about 1 hour 10 minutes in the preheated oven, or until cake tests done.
    6. Cool in the tin for about 10 minutes then transfer to a wire rack to cool before slicing.

    375g of flour? I dont have a runny cake mixture to pour?? not sure what to do with this now....  -  01 Jan 2013
