Baked cod with fennel and tomato

    You only need 5 ingredients to make this easy baked cod dish flavoured with thinly sliced fennel and fresh tomatoes.

    Serves: 2 

    • 2 tomatoes, sliced
    • 1 fennel bulb, thinly sliced
    • pepper and salt, to taste
    • 400g cod fillets
    • 75ml white wine
    • 6 small cubes of butter

    1. Preheat the oven to 200 C / Gas 6.
    2. Lightly grease a baking dish; arrange 1/2 of the tomato and fennel slices on the bottom of the dish and season with salt and pepper. Place cod fillets on top, then layer remaining tomato and fennel slices on top. Season with salt and pepper and drizzle white wine over the tomatoes; dot with cubes of butter.
    3. Bake in preheated oven for 35 to 40 minutes, or until fish is cooked through.
