2 chicken breast fillets, cubed
juice of 1 lime
1 tablespoon veg oil
150ml coconut milk
2 tsp corriander leaves (fresh if poss)
50g spring onions, chopped
1 tablespoon fish sauce

Leave the chicken to marinate in the lime juice for 1 hr in fridge.
Heat oil in a wok over medium high heat. Stir fry chicken till golden brown then add coconut milk and coriander and simmer for 2 min, add half of the spring onions and fish sauce and cook for another 2 mins. Add remainder of spring onions stir quickly then garnish with a few coriander leaves and serve with rice.
