An easy pasta dish made with spinach tagliatelle, bacon, garden peas and a deliciously creamy cheese sauce.

250g green tagliatelle, or other pasta
1 tablespoon butter
1 onion, finely chopped
100g chopped bacon or lardons
150g frozen peas, thawed
1 teaspoon freshly chopped thyme
pinch of dried chilli flakes
150ml single cream, or as desired
100g finely grated Parmesan cheese
1 tablespoon freshly chopped parsley
salt and pepper, to taste

Cook pasta in boiling water according to instructions on the packet; drain, reserving some of the cooking liquid.
Melt butter in a frying pan over medium heat; and bacon and cook until slightly crispy. Stir in onion and cook for 3 minutes or until softened; stir in thyme and dried chilli flakes. Add cream and peas; stir over low heat until peas are heated through.
Remove sauce from the heat; stir in grated cheese and parsley. Add tagliatelle and toss to coat in the sauce, adding some of the reserved cooking water, if needed. Serve with extra grated Parmesan.
