Creamy bacon and pea tagliatelle

    An easy pasta dish made with spinach tagliatelle, bacon, garden peas and a deliciously creamy cheese sauce.

    • 250g green tagliatelle, or other pasta
    • 1 tablespoon butter
    • 1 onion, finely chopped
    • 100g chopped bacon or lardons
    • 150g frozen peas, thawed
    • 1 teaspoon freshly chopped thyme
    • pinch of dried chilli flakes
    • 150ml single cream, or as desired
    • 100g finely grated Parmesan cheese
    • 1 tablespoon freshly chopped parsley
    • salt and pepper, to taste

    1. Cook pasta in boiling water according to instructions on the packet; drain, reserving some of the cooking liquid.
    2. Melt butter in a frying pan over medium heat; and bacon and cook until slightly crispy. Stir in onion and cook for 3 minutes or until softened; stir in thyme and dried chilli flakes. Add cream and peas; stir over low heat until peas are heated through.
    3. Remove sauce from the heat; stir in grated cheese and parsley. Add tagliatelle and toss to coat in the sauce, adding some of the reserved cooking water, if needed. Serve with extra grated Parmesan.
