Goats cheese, spinach and grape pasta salad

    Warm pasta is tossed with soft goats cheese to make a creamy salad. Add baby spinach leaves, grapes and pecans to create a summery pasta salad. You can add chopped crispy bacon for added texture, if you like.

    • 200g pasta shells
    • 100g soft goats cheese
    • 100g spinach leaves
    • 30g black or green seedless grapes, halved
    • 30g chopped pecans
    • freshly ground black pepper

    1. Cook the pasta in lightly salted boiling water, according to the instructions on the packet; drain, return pasta to pot and allow it to cool for just a few minutes.
    2. Stir in goats cheese and spinach leaves; toss until well mixed and pasta is creamy. Add grapes and pecan nuts; season with freshly ground black pepper, mix well and transfer into a serving bowl.
