Rhubarb and orange is an irresistible combination - for pies and tarts but also for jam.

1kg rhubarb, diced
400g caster sugar
2 to 3 oranges, zested and juiced
8 cl de jus d’orange

In a large pot combine rhubarb, sugar, zest, 80ml of the orange juice and water. Bring to the boil, then reduce heat and simmer till the jam thickens, strring every so often, about 45 minutes. Note that the jam will thicken as it cools.
Ladle piping hot jam into sterilised jars and close with tight fitting lids.
