Rhubarb strawberry lemonade

I love rhubarb and strawberries and it's not a wonderful combination for cakes and desserts but also for this refreshing lemonade.

Ingredients
Serves: 6
- 800ml water
- 220g rhubarb
- 170g caster sugar
- zest of 1/2 lemon
- 1/2 teaspoon vanilla extract
- 225g strawberries, sliced
- 250ml freshly squeezed lemon juice

- In a saucepan mix water, rhubarb, sugar, zest and vanilla. Bring to the boil and stir to dissolve.
- Cover and simmer for 8 minutes.
- Add half of the strawberries, bring back to the boil and simmer for 2 further minutes.
- Let cool and strain though a fine sieve, gently squeezing the fruit to extract maximum juice.
- Add the rest of the strawberries and lemon juice. Let cool, then refrigerate for several hours.
- Serve well chilled with ice cubes.
