Rhubarb strawberry lemonade

    I love rhubarb and strawberries and it's not a wonderful combination for cakes and desserts but also for this refreshing lemonade.

    Ingredients
    Serves: 6 

    • 800ml water
    • 220g rhubarb
    • 170g caster sugar
    • zest of 1/2 lemon
    • 1/2 teaspoon vanilla extract
    • 225g strawberries, sliced
    • 250ml freshly squeezed lemon juice

    Method

    1. In a saucepan mix water, rhubarb, sugar, zest and vanilla. Bring to the boil and stir to dissolve.
    2. Cover and simmer for 8 minutes.
    3. Add half of the strawberries, bring back to the boil and simmer for 2 further minutes.
    4. Let cool and strain though a fine sieve, gently squeezing the fruit to extract maximum juice.
    5. Add the rest of the strawberries and lemon juice. Let cool, then refrigerate for several hours.
    6. Serve well chilled with ice cubes.
