My family loves these homemade sausage rolls that are spiced up with crushed chillies. Delicious served with a chunky tomato relish.

Makes: 16 sausage rolls
400g pork mince or sausagemeat
1 teaspoon crushed chillies
1 tablespoon soy sauce
1/4 teaspoon ground nutmeg
1 teaspoon allspice
dash of Worcestershire sauce
1 egg, beaten
500g ready-made puff pastry
egg wash, for brushing

Preheat the oven to 180 C / Gas 4. Lightly grease or line a large baking tray.
Place pork mince in a large bowl; add crushed chillies, soy sauce, nutmeg, allspice, Worcestershire sauce, breadcrumbs and egg until well combined. If the mixture seems too wet, add some more breadcrumbs.
Roll out pastry on a lightly floured surface, about 48cm x 32cm; slice in half and then cut each half into 8 equal portions to get 16 pieces in total. Brush one end of each rectangle with a little of the beaten egg; spoon some of the sausage mixture on one half of each rectangle and fold pastry over, pressing down with a fork, to secure the longer edge.
Arrange sausage rolls on prepared tray; brush well all over with the rest of the beaten egg and bake in the oven for about 30 minutes, or until the pastry has turned golden brown.
