Rocket, Brie and orange salad

    Rocket or mixed salad leaves are topped with pieces of brie, slices of orange and pecans to create this refreshing salad that makes a lovely starter.

    Serves: 3 

    • 1 large orange or blood orange
    • 2 tablespoons olive oil
    • salt and freshly ground black pepper, to taste
    • 100g rocket or mixed salad leaves
    • 50g Brie cheese, cubed
    • 30g pecan nuts

    1. Slice the top off the orange, about 2cm thick. Squeeze the juice from this slice into a small bowl; add olive oil and whisk in salt and pepper to taste.
    2. Salad:

    3. Place rocket leaves in a salad bowl or platter.
    4. Zest the remaining orange and scatter on top of rocket leaves. Peel remaining orange and slice into rounds; add to salad. Top with Brie and pecan nuts; drizzle salad dressing on top and serve.
