Apple cake with raisins

    This is a double apple cake with apples and raisins in the pastry base and an apple topping.

    Serves: 8 

    • 4 small apples
    • 2 eggs
    • 200g caster sugar
    • 200g soured cream
    • 1 lemon, zested and juiced
    • 250g plain flour, sifted
    • 1 teaspoon bicarbonate of soda
    • 1 teaspoon cinnamon
    • 100g raisins
    • 100g butter or margarine

    1. Preheat oven to 180 C. / Gas 4. Grease and flour a cake tin.
    2. Peel and core all of the apples. Cut 2 apples into small cubes and the other 2 into very thin slices.
    3. Mix eggs with sugar and soured cream in a large bowl. Add grated zest and lemon juice. Add sifted flour, bicarb of soda and cinnamon and stir to combine. Add raisins and diced apples and stir again.
    4. Melt the butter and add to the mixture. Stir till combined.
    5. Grease a cake tin and dust with flour. Tip mixture into tin and arrange sliced apples on top in circles.
    6. Bake in the preheated oven till a tester comes out clean. 40 to 45 minutes.


    For a crispy finish, brush the top of the cake with runny honey or jam.
