Vegan creamy lentil sauce

    This vegan sauce is made with lentils and cashew nuts. It is high in protein so quite filling when served over brown rice or pasta.

    Makes: 500 ml

    • 100g red lentils
    • 250ml water
    • 140g raw cashew nuts
    • 2 tablespoons lemon juice
    • 1 teaspoon ground saffron
    • 1 pinch hot chilli powder (optional)
    • salt and black pepper to taste

    1. Place lentils and water in a pot; bring to the boil over medium heat and simmer until lentils are cooked, about 20 minutes.
    2. Transfer cooked lentils to a blender or food processor; add cashew nuts, lemon juice, saffron, chilli powder and process until creamy. Season with salt and pepper to taste.
    3. Serve over hot pasta or rice.
