Parsley and garlic rice

    White rice is cooked in a flavourful stock made with loads of fresh parsley, onion and garlic to make this Mexican-inspired green rice. You can use a combination of herbs, such as fresh coriander, if you prefer.

    Serves: 4 

    • 750ml of vegetable stock
    • 30g fresh parsley
    • 1/4 onion, chopped
    • 1 clove of garlic, peeled and halved
    • 3 tablespoons vegetable oil
    • 300g white rice
    • salt, to taste

    1. Blend vegetable stock, parsley, onion and garlic in a food processor until smooth.
    2. Heat oil in a heavy based saucepan; stir in rice and stir to coat in oil. Add stock mixture and stir well. Cover pot and simmer rice over low heat until liquid is absorbed, about 12 to 15 minutes. Fluff rice with a fork and serve.
