Leite frito (Brazilian custard fritters)

    Leite frito is the the Brazilian version of the Spanish dessert Leche frita, a custard dessert with a deep fried crispy shell.

    Serves: 6 

    • 4 eggs
    • 4 egg yolks
    • 5 tablespoons caster sugar
    • 1L milk
    • 250g plain flour
    • 1/2 teaspoon ground cinnamon
    • 1 lemon, zested
    • 1 egg, lightly beaten
    • breadcrumbs for dredging
    • oil for deep frying

    1. Beat eggs, yolks and sugar with an electric mixer on medium speed until pale and fluffy. Set to one side.
    2. In a saucepan, combine milk and flour and whisk till smooth. Add egg mixture, cinnamon and lemon zest. Cook the mixture over low heat till thickened, about 12 minutes, stirring often.
    3. Pour mixture in a greased baking dish and let it cool. Then refrigerate for 30 minutes.
    4. Cut the set custard into pieces. Dip each piece in beaten egg and then dredge in breadcrumbs. Deep fry in hot oil until golden brown. Drain on kitchen paper.
    5. Serve hot with ice cream or red fruit jam.
