Spicy courgette, aubergine and basil pasta

    This easy courgette, aubergine, tomato and basil vegan pasta dish is spiced up with fajita seasoning.

    Serves: 6 

    • 300g fusilli pasta
    • 2 tablespoons olive oil
    • 1 teaspoon spicy fajita seasoning mix
    • 1 tablespoon tomato puree
    • 1 aubergine, cubed
    • 1 courgette, cubed
    • 2 tablespoons freshly chopped basil
    • salt and pepper, to taste

    1. Cook pasta in boiling water according to instructions on the packet, until al dente; drain, reserving some of the cooking liquid.
    2. Heat olive oil in a pan over medium heat; stir in fajita seasoning and tomato puree until well combined.
    3. Stir in aubergine and courgettes; cook until softened, adding some of the reserved cooking water if necessary to make a sauce.
    4. Add pasta and freshly chopped basil; toss well to mix. Season to taste with salt and pepper; serve.
