    Makes: 30 -40 biscuits

    • 100g fine corn meal
    • 100g caster sugar
    • 100g butter, at room temperature
    • 1 egg
    • 250g cornflour

    1. Preheat oven to 180 C / Gas 4. Grease two baking trays.
    2. In a large bowl mix corn meal, sugar and butter till combined. Knead well sing your hands.
    3. In a bowl beat egg with a folk and add to mixture. Mix well again.
    4. Gradually add cornflour till mixture no longer sticks to your fingers.
    5. Shape into small balls and place on the prepared trays with good distance between them. Press down on each with the tines of a fork.
    6. Bake each baking tray in the preheated oven till crispy, about 40 to 50 minutes.
