Chunky pineapple ice cream

    This is a an easy, egg free ice cream with fresh pineapple. It does not require an ice cream maker.

    Serves: 10 

    • 1 pineapple, trimmed and finely diced
    • 2 (135g) sachets pineapple jelly
    • 1 (150ml) tub soured cream
    • 1 (397) tin condensed milk
    • 3 tablespoons caster sugar

    1. In a small saucepan, bring pineapple with sugar to the boil over medium. Remove pineapple and set aside, reserve liquid.
    2. Add jelly to saucepan and stir till dissolved. Add condensed milk and soured cream, stirring well. Beat till smooth.
    3. Evenly spread pineapple over bottom of a rectangular baking dish and cover with jelly mixture. Freeze till firm, about 4 hours.
