Preheat the oven to 170 C / Gas mark 3.
In a medium bowl, stir together the flour, brown sugar, caster sugar and cinnamon. Rub in the butter until the mixture is like fine crumbs. Pack the crumbs into a ball, then knead by hand until smooth. On a lightly floured surface, roll the dough out into a 20cm circle. Place the circle on a baking tray, and slice into 16 wedges. Leave the circle intact.
Bake for 25 minutes in the preheated oven, or until the centre has set. Cut the circle into wedges again while it is still warm, and transfer to a wire rack to cool.
Very easy. Very morish. And too easy to eat the whole lot! I find all butter shortbread too greasey for me so this is perfect as its not too buttery. I added All spice for a Xmas feel. NUMMEH!!!! - 17 Dec 2010
Altered ingredient amounts.
I make these ith half white and half brown flour so they turn out little more brown and people love that as they look more like brown suger shortbread. Plus they are just that little bit more healthy. - 18 Dec 2009
