Black eyed bean and veg salad

    A high fibre bean salad for the summer with fresh veg and cilantro. Instead of cooking your own beans, you can also make this salad with tinned black eyed beans.

    Serves: 4 

    • 300g black eye beans
    • 600ml water
    • 2 tomatoes, chopped
    • 1 small onion, minced
    • 1 pepper, seeded and diced
    • 1 tablespoon extra virgin olive oil
    • 1 tablespoon white wine vinegar
    • 2 tablespoons minced fresh coriander
    • salt

    1. Put the beans in a saucepan with 600ml water and cook them until tender, about 40 minutes. Drain and let cool.
    2. Toss all ingredients in a salad bowl and serve.
