Cocada mole (Brazilian coconut pudding)

    This creamy dessert is a Brazilian version of rice pudding where dessicated coconut is used for thickening.

    Serves: 8 

    • 1 (400g) tin sweetened condensed milk
    • 1 tablespoon butter
    • 100g dessicated coconut
    • 150ml double cream

    1. In a saucepan heat condensed milk with butter and coconut and slowly bring to the boil, then reduce heat and simmer till the mixture thickens and detaches from the bottom of the pan. Make sure to stir constantly so it won't burn.
    2. Remove from heat, stir in the cream till evenly combined. Pour into dessert bowls or cups and refrigerate till well chilled, at least for 2 hours.
