Brazilian cheesy rice

    This savoury rice side dish is traditionally cooked with a salty cheese from the northeast of Brazil called Queijo coalho but it will taste just as good using halloumi.

    Serves: 5 

    • 200g white rice
    • 500ml water
    • 1 teaspoon salt
    • 500ml milk, or more if needed
    • 150g Queijo coalho or halloumi cheese, cubed

    1. Bring water, rice and salt to the boil in a saucepan over medium heat; cover and cook until the water is absorbed.
    2. Slowly stir in milk; season to taste with salt and simmer for 10 minutes, or until the rice is tender.
    3. Stir in cubes of cheese; remove from heat and let the rice stand for a few minutes before serving.
