Black bean noodles with vegetables and prawns

    Gluten free black bean noodles can be found in Asian grocery stores.

    Serves: 2 

    • 400g black bean noodles
    • 1/2 teaspoon olive oil
    • 100g peeled and deveined prawns
    • 1 red pepper, seeds removed and diced
    • 1 carrot, sliced
    • 1/2 small onion, sliced
    • 50g fresh button mushrooms, sliced
    • salt

    1. Cook noodles according to package instructions in 1.5L water. Drain.
    2. In a saucepan, heat the olive oil and sauté the prawns and vegetables for 10 minutes, stirring a few times. The should still have some bite. Season with salt, toss with pasta and serve hot.
