Italian bresaola with red peppers and capers

    Bresaola is an Italian cured meat that has been salted and air-dried. I like to serve it with finely chopped red pepper, capers and fresh basil in this antipasti or beef starter. Best to let it chill in fridge for 1 hour before serving.

    Serves: 4 

    • 300g bresaola slices (air-dried aged beef)
    • 20 capers
    • 8 basil leaves, finely chopped
    • 1 clove of garlic, very finely minced
    • 1 red pepper, seeds removed and very finely minced
    • 2 tablespoons freshly grated Parmesan cheese
    • olive oil, as needed
    • thin slices of lemon, to serve

    1. Arrange bresaola on a platter or divide between 4 plates.
    2. Sprinkle capers, freshly chopped basil, garlic, red pepper and Parmesan cheese on top; drizzle with olive oil.
    3. Cover and chill dish in fridge for one hour; serve with thin slices of lemon.
