Salmon and pea tagliatelle

    This is an inexpensive yet impressive Italian pasta recipe. Smoked salmon, or leftover poached salmon, is tossed in a white wine cream sauce with peas, spring onions and tagliatelle pasta.

    • 250g tagliatelle pasta
    • 1 tablespoon oil
    • 125g spring onions, chopped
    • 100g frozen peas
    • 100ml white wine
    • 100ml fish stock
    • 125g smoked salmon, sliced
    • 125ml cream

    1. Cook the tagliatelle until al dente in boiling salted water; drain well.
    2. Heat oil in a pan over low heat; stir in spring onions. Add peas, white wine and fish stock; simmer and stir for 2 or 3 minutes.
    3. Add smoked salmon and cream; stir in cooked tagliatelle and toss well until heated through.
