Chimichurri without coriander

    There are different variations of the steak sauce chimichurri. This recipe is with parsley, basil, and oregano.

    Makes: 3 cups

    • 120g minced parsley
    • 15g minced basil
    • 1 red pepper, seeded and minced
    • 2 garlic cloves, minced
    • 2 tablespoons dried oregano
    • 3 tablespoons crushed dried ├írbol chilli
    • 100g chopped walnuts
    • salt and pepper
    • 2 lemons, juiced
    • 250ml olive oil

    1. Place parsley, basil, pepper and garlic in a bowl. Add oregano, crushed chilli, walnut, salt and pepper. Add lemon juice, vinegar and oil. Mix everything very well until you have a homogeneous sauce.
    2. Place the chimichurri in a sterilised jar with lid and keep in the fridge.
