Ingredients
Makes: 200 ml
- 1 egg
- 1 chipotle chilli pepper in adobo (see note)
- ½ teaspoon mustard
- 2 lemons, juiced
- ¼ teaspoon white pepper
- ½ teaspoon salt
- ¼ teaspoon caster sugar
- 180ml vegetable oil

- Place the egg, chipotle chilli pepper, mustard, lemon juice, pepper, salt and sugar in a blender or food processor; blend until smooth. Continue to slowly add the oil with the blender still running until you reach the consistency you prefer.
Chipotle chiles in adobo:
These chillies are sold in tins and available online and in Mexican grocers. They are dried chipotle chilli peppers in a sauce. They add heat and a smoked flavour to your Mexican dishes.

This recipe contains raw eggs. It is recommended that pregnant women, young children and the elderly do not consume raw eggs.
