Coriander brown rice

    Brown rice is cooked with pureed onion and fresh coriander in chicken stock to make this flavourful side dish.

    • 1 onion, peeled and roughly chopped
    • 1/2 bunch of fresh coriander
    • 1 tablespoon oil
    • 250g brown rice
    • 875ml water
    • 1 tablespoon chicken stock granules

    1. Place onion and fresh coriander in a blender or food processor; blend until smooth.
    2. Heat oil in a saucepan over medium heat; add rice and stir to coat in oil.
    3. Add pureed coriander mixture and water; bring rice to the boil. Stir in chicken stock granules; simmer rice over low heat until rice is cooked, about 40 minutes.
    4. Fluff rice with a fork; cover and let stand for 5 minutes before serving.
