Nieve raspada de leche (Mexican iced milk)

    Halfway between a milkshake and a dessert, this Mexican specialty consists of simple syrup cooked with condensed milk and mixed with coconut or walnuts, then served over crushed ice.

    Serves: 6 

    • 500ml water
    • 100g caster sugar
    • 2 (400g) tins sweetened condensed milk
    • 100g dessicated coconut or chopped walnut
    • crushed ice

    1. In a saucepan bring water and sugar to the boil till the sugar is fully dissolved. Stir in condensed milk and simmer for 5 minutes. Stir in coconut. Let cool.
    2. Fill glasses with crushed ice and pour mixture on top.
