Polenta with beef mince and tomato sauce

    If you want a change from the usual pasta with beef mince and tomato sauce, try this recipe with polenta.

    Serves: 8 

    • For the polenta
    • 1.9L water
    • 1 beef stock cube
    • 360g polenta
    • 2 teaspoons salt
    • 3 tablespoons butter
    • For the sauce
    • 3 tablespoons oil
    • 1 large onion, minced
    • 3 garlic cloves, minced
    • 400g beef mince
    • 1 bay leaf
    • 5 tomatoes, chopped
    • 1 green pepper, seeds removed and diced
    • 2 teaspoons salt

    • 4 tablespoons ready made tomato sauce

      Cook the polenta

    1. In a saucepan, bring the water to the boil and add the stock cube. Stir till dissolved.
    2. In another saucepan, add the polenta and the salt. Add two ladles of boiling stock and stir till incorporated.
    3. Turn on the heat on the second saucepan and gradually add the stock except for 2 ladles full, reserve those for the tomato sauce.
    4. Cook for about 20 minutes, stirring constantly. Add the butter stir till dissolved. Transfer the polenta to a serving dish and cover to keep it warm.
    5. Make the sauce

    6. In a large frying pan, heat the olive oil and add the onion and garlic. Fry till translucent.
    7. Add the mince and bay leaf and fry over high heat till the meat is browned, about 5 minutes.
    8. Add the tomatoes and pepper. Season with salt and pepper to taste. Cook till the tomatoes are falling apart, stirring every so often.
    9. Add the tomato sauce and the reserved beef broth. Continue to simmer for a further 10 minutes.
    10. Spoon the sauce over the polenta and serve at once.
